The Last Few Days!

Saturday was a pretty hard day for my family. My great grandmother passed away and it was pretty hard for everyone. I was not that close to her as I was with my other great grandmother, but I still loved her like no other! And Sunday everyone stopped by with food and to just to tell the family they were thinking about us.
On Monday I had my last exam at 8AM then I came home to spend some quality home with my oh so lovely boy Mac. I love this dog so much (:


So today was my birthday! I left my teen years for my twenties...YIKES! But, it was a great birthday with my family but my sister was not able to make it because of her exams. I got a small monogrammed ring (which I LOVE), a few clothes, some money, and a snow jacket and boots for Boone! So, tomorrow is back to the daily duties as a 20 year old! That just sounds so weird (:

Almost Finished!


Whew it has been one stressful week and thank goodness it is over and only one more exam to go! Then I am FREEE….until January 17th. But to make this week a little better my parents and spent a little family time together and now I am watching Dallas Cowboys Cheerleaders, and the finally Sweet Home Alabama!!! Since exams are almost over my sister will be home next week and we can finally go Christmas shopping for the family! Ahh I can not wait! I know its short but my favorite shows are on (:

How do you celebrate the Holidays?

Today’s topic is how do you celebrate the holidays? On the eve of Christmas eve we always attend out church’s Christmas play. Then on Christmas eve we have a dinner with my mother’s side of the family and we play games until the wee hours of the morning. Then Christmas morning we have breakfast with my dad’s brother and his girlfriend, and my mother’s parents. Then we all exchange gifts. Pretty much my Christmas consists of family and just being together! Which I love!

Favorite Holiday Desert/Treat Recipe

Today has been crazy busy! Exams started today and the last little bit of work I had to finish for classes! I am so glad it is almost over for my birthday and Christmas! My mom even asked for a Christmas list today….hardest thing I have done in a while! But, I have made it through the day and I am back for day 6 of Neely’s Fabulous Holiday Challenge! Today’s topic is Favorite Holiday Desert/Treat Recipe. Since I love peanuts I have to say peanut brittle is my favorite Christmas treat!


1 ½ tsp. baking soda
1 tsp. water
1 tsp. vanilla
1 ½ cups sugar
1 cup water
1 cup light corn syrup
3tbsp. butter or margarine
1 pound shelled unroasted peanuts

1.    Heat oven to 200ºF. Butter 2 cookie sheets, 15 1/2x12 inches, and keep warm in oven. Mix baking soda, 1 teaspoon water and the vanilla; reserve.
2.    Mix sugar, 1 cup water and the corn syrup in 3-quart saucepan. Cook over medium heat, stirring occasionally, to 240ºF on candy thermometer or until small amount of syrup dropped into very cold water forms a soft ball that flattens when removed from water.
3.     Stir in butter and peanuts. Cook, stirring constantly, to 300ºF or until small amount of mixture dropped into very cold water separates into hard, brittle threads. (Watch carefully so mixture does not burn.) Immediately remove from heat. Quickly stir in baking soda mixture until light and foamy.
4.    Pour half the candy mixture onto each cookie sheet; quickly spread about 1/4 inch thick. Cool completely, at least 1 hour. Break into pieces. Store in covered container.

A Little Bit of Everything!

Exams start next week….YIKES! I have been studying all day and I thought I could use a little break to read some blogs. Well that little break has turned into about two hours now…whoops. But anyways, only two more days of school and I will be finished for Christmas and getting ready to transfer! Which I am so excited to be doing!

I am seriously addicted to monogrammed things! Just add it to my Christmas list mommy (:

Whew it is finally Friday! Since my teacher cancelled my only class today I have been catching up on blog reading! Needless to say I have done pretty much nothing (: But, that’s okay! This post I have a feeling is going to be super long (: But, that’s okay too! So here we go…
